Here’s a creative way to use up that pumpkin!

Directions

Combine eggs, sugar, oil &
pumpkin. Mix well.

Combine flour, pumpkin spice, soda & salt in a large bowl and make a
well in the centre of the flour mixture.

Pour pumpkin mixture into
well of flour mixture, stir well.

Add chopped nuts.

Spoon batter into
2 greased loaf pans.

Bake at 350F (180C) for 45 to 60 minutes. Bread
is done when a toothpick inserted in centre comes out clean.
Cool for 10 minutes before removing from pan.
