Pumpkin Nut Bread

Here’s a creative way to use up that pumpkin!

Ingredients

  • 3 eggs, slightly beaten

  • 2 cups brown sugar

  • 3/4 cup vegetable oil

  • 11/2 cups cooked pumpkin puree

  • 3 cups flour

  • 2 tbsp pumpkin spice

  • 2 tsp baking soda

  • 1 tsp salt 5mL

  • 1 cup chopped nuts (opt.)

Directions

  1. Combine eggs, sugar, oil & pumpkin. Mix well.

  2. Combine flour, pumpkin spice, soda & salt in a large bowl and make a well in the centre of the flour mixture.

  3. Pour pumpkin mixture into well of flour mixture, stir well.

  4. Add chopped nuts.

  5. Spoon batter into 2 greased loaf pans.

  6. Bake at 350F (180C) for 45 to 60 minutes. Bread is done when a toothpick inserted in centre comes out clean.

Cool for 10 minutes before removing from pan.
