Irish Stew

 

Ingredients

  • 2 lb boneless lean lamb; cut into 1 inch cubes

  • 1 medium onion sliced

  • 1 tbsp Worcestershire Sauce

  • Salt & fresh black pepper to taste

  • 2 cups water

  • 2 lb potatoes waxy red and/or white peeled

  • 3 medium carrots peeled and sliced

  • 1 cup fresh or frozen peas

Directions

  1. Preheat oven to 300°F

  2. Combine lamb, onions, salt, pepper, worcestershire sauce & water into a large pot or casserole dish.

  3. Cover the pot and bring it almost to a boil over high heat, then either turn stove down to low or place the covered dish in the oven.

  4. Adjust the temperature to keep the lamb boiling gently. Meanwhile chop the potatoes and slice the carrots.

  5. After the lamb has cooked for 45 minutes, add the potatoes, carrots and peas.

  6. Add a little more water if stew appears dry or if you like more broth in your stew.

  7. Cook for 60 minutes.

Serves 4-6.
