Carrot Cake

 

Ingredients

  • 3 cups grated carrots
  • 2 cups sugar
  • 2 cups flour
  • 4 eggs
  • 1 1/2 cups oil
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 1/2 tsp. nutmeg
  • 1 tsp. vanilla
  • 14oz. can pineapple tidbits (drained)

Directions

  1. Preheat oven to 350 C
  2. Mix all ingredients
  3. Bake in a greased & floured pan until fork comes out clean, approximately 45 minutes

Do not over bake.
Wait for cake to cool and ice with cream cheese icing.

Cream Cheese Icing

  • 1 3/4 cups icing sugar
  • 4 oz (125 g) cream cheese - room temperature (1 cup = 250g pkg)
  • 1/2 cup butter or margarine - room temperature
  • 2 tsp vanilla

In a bowl beat butter, cream cheese and vanilla until light and smooth. Gradually beat in icing sugar until smooth and spreadable.
