Carrot Cake |

Ingredients
- 3 cups grated carrots
- 2 cups sugar
- 2 cups flour
- 4 eggs
- 1 1/2 cups oil
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1 1/2 tsp. nutmeg
- 1 tsp. vanilla
- 14oz. can pineapple tidbits (drained)

Directions
- Preheat oven to 350 C
- Mix all ingredients
- Bake in a greased & floured pan until fork comes out clean,
approximately 45 minutes
Do not over bake.
Wait for cake to cool and ice with cream cheese icing. |

Cream Cheese Icing
- 1 3/4 cups icing sugar
- 4 oz (125 g) cream cheese - room temperature (1 cup = 250g pkg)
- 1/2 cup butter or margarine - room temperature
- 2 tsp vanilla
In a bowl beat butter, cream cheese and vanilla until light and
smooth. Gradually beat in icing sugar until smooth and spreadable. |
