Broccoli Cheddar Soup |

Ingredients

1 bunch Broccoli, flowerettes removed, stems diced

2 stalks Celery, diced

1/2 cup Butter
-
1/2 cup Flour
-
3 cups Chicken stock
-
3 cups Milk
-
1 clove Garlic, crushed
-
dash Worcestershire sauce
-
White pepper
-
Salt
-
2 cups Grated cheddar cheese
-
1/2 cup Whipping cream

Directions

Blanch broccoli flowerettes and then refresh in cold water. Set
aside to drain well.

In a heavy pot, cook vegetables in butter approx 10 minutes,
don’t brown. Whisk in flour.

Cook while continuing to stir, only a few minutes until butter
and flour mixture is light brown in colour.

Add stock slowly, while continuing to stir mixture.

Once stock is incorporated, continue to stir until it comes to a
boil. Turn heat down and continue to simmer.

Add spices and milk. Simmer very gently for 30 minutes.

Add cheese and stir until melted.

Add cream.
-
Garnish with flowerettes. Serve.
