Baked Ham in Pineapple Sauce

Ingredients

  • 1 8-10 lb. ham

  • 2 tbsp. whole cloves

  • 2 cups apple juice or cider

  • 1 cup dijon or hot honey mustard

  • 2 1/4 ounce cans of crushed pineapple in syrup

  • 2/3 cup honey

  • 1/2 tsp. ground ginger

Directions

  1. Preheat oven to 325°F

  2. Place the ham on a rack in a roasting pan; insert cloves into ham in a diamond pattern.

  3. Pour apple juice into the bottom of the roasting pan.

  4. Heat on the stovetop until the juice boils; then place the pan into the oven.

  5. Cook until the internal temperature of the ham reads 160ºF, about 20 minutes per pound.

  6. For the glaze, combine mustard, pineapple (with its juice), honey, and ginger into a saucepan.

  7. Bring to a boil over medium heat; reduce heat and simmer 5 minutes, stirring occasionally.

  8. About 40 minutes before ham is to ready, score the surface in diamond shapes and spread the glaze over the surface.

  9. Return the ham to the oven and baste with the glaze every 10 minutes.
